HK milk tea and Portugese egg tart. Must have egg tarts. Multiple.

Pork sandwich.

The way we always ate toast. Butter and sugar.

Crema cafe. Coffee art goes cutesy in Hong Kong. Even McCafe Hong Kong gots the skills.

Famous rice rolls. Peninsula Hotel gets their rice rolls here.

Dim sum at Tin Lung Heen @ Ritz-Carlton Hong Kong

Black Pig BBQ Pork. The best Chinese bbq pork.

Abalone tart.

Minced pork with noodles. Of course, better than the Taiwanese truck in NYC. But, not better than your mom's. I will still eat 2 bowls.

Famous pancakes. Crispy outside, chewy inside.

Vinegar pig knuckles. This is what pregnants eat. I crave. Everyday. Collegen keeps your skin nice.

Milk dessert from Australia Dairy Company. Highly raved, but I still favor Yee Shun Milk Company.

Awesome swag from my trip to Hong Kong: a jacket that I like to call "The Potato Sack", a pair of Comme des Garcons Play Jack Purcell, Ciesta camera strap, extra bag of fat, empty wallet.By the way, never agreed with the rumors that Hong Kong is cheap for shopping. Luckily for me, it was holiday sale season.

Fall Music For Cloudplum 4: Japan

My favorite DJ related thing to do for the last four years has been my annual Fall Music For Cloudplum Mixtape. What started out as me making a live mix on a Texas Fall day a few years ago, has turned into an on going series related to my favorite season as well as the style of music I tend to lean towards for home listening.

Volume 4 is comprised of nothing but Japanese artists, which marks the first time in the series devoted entirely to a specific area in the world. I spent the Summer of 2010 in Tokyo and I miss it everyday.

Check out this chart from Bundle, detailing the dine out expenditures from NYers across the boroughs. According to FastCoDesign, the "top 10% of restaurant spenders drop an average of $2,247 every month eating out. The median is a whopping $447. If you're not good at math, that amounts to $26,964 and $5,364 a year."

Makes me want to use that cookbook more often... then after several minutes, succumb to the craving of a flaky, ultra buttery and tasty biscuit only Northern Spy Food could make.

I love that this video could be stumbled upon by people who are looking for the current Denzel Washington flick, Unstoppable, but instead of watching a trailer full of action and vehicles being blown up, you end up being educated on a serious issue we face: the lack of chemical security. It's refreshing to pick up info in this casual manner and not in an extreme activist approach. If businesses bank on viral campaigns to get their message out, why shouldn't the same be done for social and environmental issues?

Last night on The Apprentice, the co-ed teams were tasked to design and construct an in-store display for Kim Kardashian's perfume. The Voluptuous New Fragrance. One team consisted of three women and the other team consisted of two men and one woman. From the start, the two men put the pressure on the woman in their team to suggest feminine ideas. She, herself, admit that she's not as feminine as the other girls on the other team. EXCUSES! ALL AROUND. You do not have to be a woman to design for a woman. Your femininity or masculinity should not be a factor in your abilities. RANGE! The team with three women failed completely due to their "cheap-looking," crafty display. The team with the men and woman created an elegant display that represented the brand as Kim would liked. Overall, I was very disappointed in these men and women who are trying to work for Trump to have such a gender bias.

As a female creative, I would hate to be stuck in a role where I can only work on beauty, fashion, and motherly clients. Just because I am female does not mean I cannot design for or concept on a men's product. It's only an excuse when using your gender to defend your work.

A History of Cocktails

If one thing isn't hurting as a consequence of the American economic collapse, it's alcohol sales. While American beer sales have gone down overall, American craft beer has taken off, with breweries such as Dogfish Head reporting increased profits as it further builds its reputation with each passing year. Even more striking, however, is the new resurgence not just of mixed drinks, but of places designed after early 1900s cocktail bars and Prohibition-era speakeasies, like Varnish, which lies hidden within Cole's in Los Angeles, Tavern Law (which features a secret bar-within-a-bar) in Seattle's Capitol Hill neighborhood, and remote European-style taverns like Jimgermanbar in Waitsburg, Washington, where the sign on the town's Main Street displays only a glass on a wooden sign. If you know what you're looking for, you'll be rewarded by talented mixologists who make sophisticated drinks to order based on their own encyclopedic knowledge of the medium and what they can learn about you and your tastes. You will also probably feel at least slightly drunk, because their medium tends to be full of alcohol alongside its high-quality garnishes, fresh juices, and other additions. Some of the most forward-thinking restaurants now build entire multi-course meals paired and designed to showcase certain liquors, such as this Seattle-based showcase for Maker's Mark, where the bourbon was served in drinks containing multiple varieties of bitters, smoked juices and aperitifs alongside sweet foie gras torchons, and sous vide pork belly, among others. The French Culinary Institute's Dave Arnold has even gone so far as to transform a cucumber into a martini.

But how did we get here? The cocktail took shape somewhere in the early 19th century and was defined as "a stimulating liquor, composed of spirits of any kind, sugar, water and bitters" in The Balance and Columbian Repository of 1806. By that point, a number of mixed drinks, such as Toddies and Juleps, already existed, but they had yet to take on the name "cocktail." Many stories exist as to where the name came from, though none have been verified: some include the theory that a literal cock's tail served as a drink garnish, that leftovers from ale were sold as "cock tailings," or that it was a translation or corruption of the name of the Aztec goddess Xochitl, among others. The pre-prohibition cocktail, like early Coca-Cola, also often contained some sort of kick beyond alcohol: coca leaf-treated wine, called cocawine, is one such example. The history of the cocktail, however, is a fragmented and difficult thing to trace: almost any given mixed drink has at least five stories as to when and where it came from, none verifiable.

Early drinks were often built on whiskey, but the Prohibition era forced speakeasy crowds into lower quality liquors, as bartenders were at the mercy of their illegal providers, and helped transition America from whiskey, which required aging, to gin, which did not, allowing the martini to take hold as one of the most popular American drinks. David A. Embury published The Fine Art Of Mixing Drinks, which set standards in 1948 for ratios and categories: his six drinks were the Martini, the Manhattan, the Old Fashioned, the Daiquiri, the Sidecar, and the Jack Rose. After decades of falling by the wayside, vodka took off as the clear liquor of choice throughout the 1980s, which then brings us, thirty years later, to the world of the contemporary cocktail. Drinks are multi-step procedures built with juices, tinctures, house-made bitters, herbs, and other ingredients designed to set one establishment's drinking experience apart from the competition's. Their secrets can be difficult to come by, and like the history of the cocktail itself, it's not going to provide easy answers.
